Cool cheese shop with some great cheeses! We got a hatch jack block to just snack on and it was yummy with a slight spice kick to it. They also make cheese curds fresh in the store - you can look in from the large glass windows to see the cheese curds being made! Polite and quick service, you can also try some cheeses before you pick what to buy. The mac n cheese tasted okay, but was a little bland and runny.

Long line and long wait for food but it was really good. It is at Pike’s Market so no parking but it is strategically located to get a ton of business. Lots of options for food and people had great things to say as they stood around eating and chatting. Grilled cheese was great. Lasagna and Mac and cheese were a hit and the bretzel was great. You can watch them make the cheese on site.

If you are a fan of grilled cheeses, this place should definitely be on your bucket list. Their "Flagship" cheese is phenomenal, and tastes great in everything they make. The grilled cheese itself though is a classic and Beecher's version of it is perfectly prepared. Interestingly, after we tried Beecher's, we noticed other restaurants in the area promoting that they used Beecher's Flagship cheese in their food. Must be a solid sign of longer term excellence.

Amazing Mac and Cheese and Grilled Cheese Sandwiches. As is stated in their name, they make their own cheese and you can even see them doing their good work while inside the store. I wish we had a chance to try more, but what we had was delicious. This is additionally surprising since Pike's Place Market is so touristy.

Food was pretty good! We had lasagna and Mac n cheese. The line was long, but it moved quickly, and we got our food almost immediately after we ordered. The downside is there was no where to eat besides standing on the sidewalk.
